S'mores.

Ahhh s'mores. The ubiquitous summer time snack. Apparently named because you always want "some more".

I love s'mores. The combination of marshmallow and chocolate is just too nostalgic and yummy to pass up. The problem I always have with them, is that the marshmallow gets too soft and squishes everywhere, while the chocolate stays in one hard lump, and makes the graham cracker break down the seam when you bite into it. I have tried different things to combat this... preheating the chocolate by heating it over the fire on the graham cracker (inevitably end up with lots of burnt crackers)... using one cracker as a type of sacrifical anode to prevent the one you want to eat from burning (get's too hard to balance)...

The other day, I stumbled upon a great solution to this problem...

Behold! The Chocolate Digestive Biscuit S'more!

The chocolate covering the cookies is a thin enough layer that it melts delightfully into the marshmallow. And because there is no seam running down the crackers, it doesn't break as easily! I was very happy with how these turned out. They are dangerously delicious, and will definetly leave you wanting "s'more"!
